The King's Stone Mill™ offers Artisan Craft Flour & Maize (Corn) products milled from regionally sourced & identity preserved, 100% Organic Grains. All of our flours, meals, and grits are stone-milled in a traditional fashion, using genuine 100% granite stones (i.e. we never use synthetic millstones such as the widely used material known as corundum) to mill your flour or corn products. All of our food products made at The King's Stone Mill™ are:

1) Never Bleached nor Bromated.

2) Never "Enriched" nor "Fortified."

3) Free of "Enzymes" (i.e. lab-processed chemicals) used to stabilize commercial flour products for "improved performance" and "extended shelf-life."

We stone mill using whole grains to retain the entirety of the grain's nutritional content, flavor profile, and aromatic notes of the various unique wheat & corn varieties that we offer seasonly.

Alongside our grainiac-minded predecessors and environmentally centered food entrepreneurs, we are collectively elevating the artisanal nature of "wheat" from a mere mystery ingredient across a plethora of product labels with little-to-no information, to a transparently grown and regionally sourced boutique food that rightfully deserves its own preserved culinary identity within the greater farm-to-table movement.

Where is The King's Stone Mill™ located?

The King's Stone Mill & Breadhaus™ is based in the beautiful and picturesque Ozark Mountains of Madison County, Arkansas.

We are located in the ever-growing and increasingly popular region of The South known as Northwest Arkansas. Our traditional style stone mills live atop a knoll on our small organic family farm near the old township of Kingston, off of AR Highway 21.

All of our products are made using 100% organic, regionally sourced & identity preserved artisan grains, traditionally stone milled with love right here in NWA.

How do I order with The King's Stone Mill™ and when will I receive my order?

We freshly mill all of our craft flours & Maize (corn) products on the stones daily. We are currently stone milling orders for freshly milled flours, cornmeals, and grits on a seasonal basis with limited availability.

What does "Regionally-Sourced" & "Identity-Preserved" mean in the world of artisan grains?

According to both the USDA & The 2008 Farm Bill, "a locally or regionally produced agricultural food product is defined as food transported less than 400 miles from its origin, or produced within the same state."

The FSMA or Food Safety Modernization Act of 2011 suggests an approximate distance of 275 miles OR foods that are grown and/or processed within the same state, in order to fall under the definition of a "local" food.

Let's take a closer look at these definitions of "local" and "regional." According to either of these interpretations (i.e. the 2008 Farm Bill and/or the FSMA of 2011)...a food is considered "local" if it is produced within the boundaries of the state. If a consumer lives 100 feet from a state line, and eats "locally-grown" food that was grown on the other side of that line...yet technically comes from a neighboring state...is that more or less "local" than the food they eat which comes from the same state in which they live, but is produced hundreds of miles away from their town of residence? While this is of course a rhetorical question, the fact remains that local-regional food systems have many nuances & there is simply no one-size-fits-all solution for the entirety of our nation's patchwork of existing regional food systems.

When we use the term: "Regionally Sourced"

1) We strive to source as many locally-grown grains (i.e. wheat, rye, spelt, corn, millet, etc) as possible from USDA-Certified Organic Farms located within an approx. 400 mile radius of our artisan mill. This is not an easy feat, and while we have tens of thousands of working farms in the State of Arkansas, less than 1% are currently USDA-Certified Organic. 

If you are a new or existing local/regional farmer interested in producing organic grains for artisanal markets, we encourage you to please reach out to us. We are always looking to expand our network of farmers, millers, bakers, and food entrepreneurs.

2) When we source grains that are either not readily available in our nearest geographical zones (i.e. within the approx. 400 mile "regional radius") or are seasonally unavailable due to other external or weather-related farm events (i.e. fires, flooding, crop disease, etc), we ensure the preservation of the "regional identity" of all of the small grains we work with by transparently documenting their geographical origins, the USDA-Certified Organic Farms which they are grown on, and the nutritional & characteristic profiles of these grain such as their respective protein levels, falling numbers, and culinary profiles pertaining to their unique notes of aroma, texture, & flavor. We embrace diversity in our artisan grains & are always in pursuit of that one-of-a-kind "Terroir" that we find with many other agricultural products. The regional identity of the grains remains fully preserved along the full supply chain (also known as a "chain of custody,") regardless of their geographical proximity to our mill.

"Identity-Preserved" ensures the highest degree of "grain-chain" transparency & accountability available in the local-regional supply chain of small grains.

The King's Stone Mill™ offers the most transparent option currently available in our region today when it comes to working with 100% USDA-Certified Organic & Identity-Preserved grains, along with the absolute freshest flours and ground corn products milled and created from these artisan grains, bar none.

What are the benefits of baking with fresh-milled flour?

There is a multitude of advantages to utilizing freshly milled flour vs. the number of commercially available alternatives that we find on the majority of store shelves across the world today.

For starters, let's talk about the inputs (i.e. the grains) we source before the milling even begins! All of the grains we mill here at The King's Stone Mill™ are 100% Organic. We source exclusively from USDA-Certified Organic Farms. This means farms & fields that utilize crop rotation, farmers who never treat their land with glyphosate, and working alongside those who value the natural order of nature's seasons vs. the conventional commodity farming practices promoted by the institutions of "Big Agriculture." Simply put, we ensure that the creation of our signature Flour of Life™ starts well before the Seeds of Life™ have even been sown.

Wonderful, so we produce and source the highest quality artisanal grains...then what comes next? This is where the ancient art of the stone milling truly shines. All of our flours and Maize (corn) products are milled using a traditional technique known as "Stone Milling," an art that has been all but lost in the modern age. Most commercially-available flour and corn products are produced using industrial steel roller mills, which do not allow for the nutritional superiority of the slower-paced stone milling process, responsible for transforming a whole grain wheat "berry" into its milled flour form, while fully absorbing and retaining the entirety of its inherent nutritional components.

Industrial flour mills essentially separate out all three of the primary components of a wheat berry (i.e. the wheat's bran, endosperm, and germ) before all of these components are individually isolated and moved along the production line for additional "sifting." What is left is a mechanically sterilized, nutrient-devoid, shelf-stable product that is produced with the intention of being able to sit on shelves for periods of time well beyond what the natural order ever intended!

While we do also offer "bolted" (i.e. sifted) flour and corn products in addition to our Whole Grain offerings at The King's Stone Mill™, we do so by beginning with a whole-grain milled flour to ensure that all of our sifted mill goods retain the utmost amount of their naturally occurring nutritional content and flavorful freshness before our sifting process even begins.

Did you know that industrial flour manufacturers are legally required to "fortify" the flour before it can be sold to you as a food? This is due to that fact that the product has essentially little-to-no nutrients remaining once it has been refined through an industrial processing facility and food, by its very nature, is supposed to contain nutrients! And the (not-so) funny thing is that the wheat itself already contains all of these nutrients in its unadulterated state, yet the manufacturers remove them all before selling the item as "food" to you? This is all done in order that the end customer can purchase a shelf-stable bag of what is essentially "dead flour" for the family's pantry...just patiently waiting to creep its way into everything we eat from crackers to pasta to pizza and bread.

Just wait until you find out about things like "L-Cystiene" or "Potassium Bromate." Isn't it interesting that "Potassium Bromate" is banned in more than 40 countries including Canada, Brazil, China, India, and well beyond due to its "potentially carcinogenic" status, yet somehow it's still approved for commercial use in our baking products here in the United States of America? As long as consumer behavior keeps supporting the purchase of these adulterated products, they will continue to be manufactured and brought to market for sale...day after day, year after year.

Please do not be misled by marketing gimmicks, greenwashing, and sleekly inauthentic branding designed to sow confusion amongst consumers when it comes to wheat products. The generic title of "Wheat" on your food's ingredient label without any further information is going by the wayside for the food artisans of the world. At this point in the grain, we hold all of our other foods to a high degree of traceability and accountability, so tell us...why is "wheat" any different, when it is in far more foods than our tomatoes or watermelons could ever be?

Lo and behold, we are not the only ones who feel this way, hence the reemergence of a modern day Grain Renaissance we see taking place all across the country. It's an exciting time to be alive, so let's have some fun and as it's been said...there's nothing new under the sun!

Life is too short and too sweet to spend it eating nutritionally lifeless, dead bread...no matter how good it looks (and even tastes), JUST SAY NO! There is indeed a better way!

We could never imagine going back to commercially-cranked flours after our eyes, ears, and mouths have been opened & we are confident that you'll feel the same way after experiencing the revelatory goodness of freshly-milled grains!

What's the deal with "certifications" when it comes to grains?

Yes, it's true that certifications are far from perfect. In practice, many homesteaders or "market gardeners" in your local communities are already growing foods in a manner that would actually be deemed suitable for organic certification, yet these small producers choose not to pursue the route of becoming a certified farm or production facility, for one reason or another.

Please pay close attention to our next point: in the world of market gardeners, "Low Till" and/or "No Till" are practices that are often prized for being minimally-disruptive farming approaches that promote a harmonious state of microbial biology in the soil and ultimately enhance a farm's overall soil health.

Now within the agricultural realm of grains specifically, "USDA Certified Organic" is the only current farm certification that explicitly prohibits the application of glyphosate at any time on a farmer's fields. Any intentional usage of the herbicide glyphosate is unacceptable by USDA-Certified Organic standards, and will result in an immediate suspension and/or revocation of a farm's "USDA-Certified Organic" status. 

While there are many generational farmers who farm within the 400 mile regional radius, the vast majority of them are currently producing grains in a conventional manner (i.e. their practices include broad crop spraying with chemical herbicides such as glyphosate). Even if the grain crop itself has not been sprayed directly as a desiccant, and the spraying has been done exclusively for a type of "weed control," in the fields, we still consider these grain crops to be adulterated for our milling purposes. Most of these conventionally-grown grains are ultimately destined for the commercial livestock feed market and/or the conventional commodity market intended for human consumption.

The King's Stone Mill & Breadhaus™ never cultivates, purchases, mills, nor deals with glyphosate-treated or glyphosate-exposed grains...period.

What is our long-term vision for the local-regional food system of the small grains economy here in Northwest Arkansas?

It is our long-term goal to help facilitate the establishment, directional development, and ongoing support of local-regional food system infrastructure that serves small to mid-sized farmers and artisanal food producers, known as the "Missing Middle."

Our mill's vision is a local-regional grain hub where small to mid-sized grain producers in the State of Arkansas and beyond have access to the educational & agricultural resources necessary to viably & commercially integrate small grains into their farm's seasonal crop rotations by providing the specialized services necessary for the seed banking, harvesting, transportation, cleaning, milling, packaging, and ultimately value-added product distribution of these regionally-sourced & identity-preserved artisan grains.

Limited access to this infrastructure is the single largest barrier to entry that small to mid-sized producers currently face today. Through a fresh lens and creatively innovative approach, we can collectively help push the paradigm shift necessary for the support of these regional food systems & the impressive degree of food security and resilience they provide the local community.
